Skintrack Snack: Banana Oatmeal Cookies

We won't promise these cookies look appetizing. But don’t write them off because they look like mush. It’s basically a bowl of oatmeal in portable cookie-shaped form, which is ideal for groggy mornings when you just can’t get much breakfast down before hopping in the car. I usually pop three or four of these in my jacket pocket and eat them within the first hour of skinning as a late or “second breakfast.”


Add in chocolate chips (a lot of 'em), chopped apples, pumpkin puree, coconut flakes, M&Ms, raisins...the sky's the limit!



Banana Oatmeal Cookies

Ingredients

  • 2-3 medium ripe bananas

  • 1 cup oat flour

  • 1/2 cup oats

  • 1 Tbsp. chia seeds

  • 1/2 cup chopped walnuts (can sub any other nut)

  • 1/2 ripe apple, chopped

  • 1/4 cup chocolate chips

  • 1/4 tsp. salt

  • 1/2 tsp. cinnamon

  • 1/2 tsp. vanilla



Directions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

  2. Mash the bananas with a fork or masher.

  3. Add oat flour, and stir well.

  4. Add oats, chia seeds, nuts, salt, cinnamon, vanilla and any other add-ins and stir until everything is well mixed.

  5. Let the dough sit for at least 15 minutes (on the counter or in the fridge).

  6. Spoon out dough onto your baking sheet. The cookies won’t spread at all, so don’t worry too much about spacing.

  7. Bake for 11-13 minutes, or until cookies are all firmed up and no longer mushy.
