Honey Pistachio Energy Balls

We're pretty hooked on dates. Delicious on their own and even better as a natural sweetener in baked treats and no-bake snacks, we consider these sweet little nugs a kitchen staple.


Dates are a base for many of our energy balls; our fav trail snack for its portability, easy customization, and big batch-friendly design that lets us keep dozens in the freezer at all times.


Honey and pistachio is a match made in heaven, and these salty & sweet little treats bring a smile to our faces whenever we reach for one. Grab the food processor and crank out a batch!


Honey Pistachio Energy Balls

Makes 18 - 20


Ingredients:

10-12 medjool dates

2/3 cup shelled raw pistachios

1 cup oat flour (or ground rolled oats)

1/2 tsp salt

2 Tbsp honey

Dash vanilla


1. Toss all ingredients in a food processor and blitz for about 30 seconds. It will likely be pretty dry, so add a Tbsp of water (maybe more) and blitz again.


You can leave the dough a little chunkier for texture, or keep obliterating it for a smoother texture, totally up to you. Add more salt to taste if you’re like us and can’t seem to get enough sodium in your life.


2. Roll into 1.5 Tbsp balls, place on a baking tray, and freeze.
