Scallion and Cheese Waffles

When we started writing Ski Snacks almost three years ago, one of the key components we wanted to include was more savory recipes.


Don't get me wrong, we love sugar. But the more we evaluated what was missing from our snack bag on each ski day, the answer became clear: savory snacks are lacking.


These Scallion and Cheese Waffles are an adaptation of Grandma's Overnight Waffles, one of our favorite lazy weekend brunches that my Grandma Hilda used to always make on Christmas morning. At home, when we had leftover batter, my mom would often toss shredded cheese and scallions into the batter to turn the surplus into a cheesy snack.


They've since become one of our favorite trail snacks, hearty, salty and delicious.


Whatever you prefer, the best part of this recipe is that you can have a little of each! Cook up this waffles before you add the savory additions for a delicious mud season brunch. And stir in savory additions (bacon is recommended as well) with the leftovers for a deliciously unique trail snack.

Scallion & Cheese Waffles

Makes 8-10 waffles, depending on your waffle iron


Ingredients

½ cup 105°F water*

1 Tbsp. white sugar

2 ¼ Tbsp. instant yeast

2 cups whole milk, 105°F 

½ cup unsalted butter, room temperature

1 tsp. salt

1 1/4 cups all-purpose flour

3/14 cups whole wheat flour

2 eggs

¼ tsp. baking soda

½ cup sharp cheddar cheese, shredded

4 green onions, finely chopped

Sprinkle of ground black pepper


*In order for the yeast to activate, the water should be 90-105°F. You don’t need a thermometer, just put your hand under the faucet. If it feels hot but not so hot that you have to jerk your hand away, it should be in the right range. Don’t make it too hot, or the yeast begins to die. 


Directions

  1. The night before, mix the water, sugar, yeast, milk, butter, salt, and flour in a large bowl. 

  2. Cover and let mixture sit on the counter overnight. 

  3. In the morning, beat in the eggs and baking soda. 

  4. Stir cheese and green onions into some of, or all of the batter.

  5. Preheat your waffle iron. Pour batter into the waffle iron and cook according to your waffle maker’s instructions. This will vary by design.
