Recipe: Kale Strawberry Salad

I don't know about you, but these long days working from home have me craving fresh vegetables more than ever.

This delicious Kale Strawberry Salad is how I frequently convert kale-hating friends to the salad club - tangy, crunchy, a little sweet, and full of texture. About the furthest thing possible from a sad pile of ceremonial iceberg lettuce you begrudgingly nudge onto your plate for the sole reason of feigning variety in your diet.

Kale Strawberry Salad


1 large head of kale

1 medium ripe avocado

1/2 cup cherry tomatoes, halved

1/2 cup strawberries, sliced

4 ounces goat cheese (optional)

2 teaspoons lemon juice

1 tablespoon orange juice

1 tablespoon olive oil

1/2 teaspoon salt

dash of pepper


  1. Remove the spines from the kale and coarsely chop the leaves.

  2. Mix together olive oil, lemon juice, and orange juice to make the dressing.

  3. Pour dressing over kale, massaging it with your hands. This helps the acid in the lemon juice break down the toughness of the kale.

  4. Dice half the avocado and massage into the kale along with goat cheese until it has a creamy texture.

  5. Add the tomatoes, salt, and pepper.

  6. Dice the other half of the avocado and use to sprinkle on top of the salad with the strawberries.
