Recipe: Bribery Banana Bread

If you're looking to bribe your way into a ski tune, base grind, or brake bleed, banana bread is usually the place to start.


Our Bribery Banana Bread will get you way further than any six-pack, and it comes together in less than 10 minutes. You don't even need a mixer - sometimes I just mash the bananas with my hands and mix it all together with a fork for minimal clean up. Mountain town bartering has never been so easy...


If you plan to actually keep your banana bread instead of using it as high-elevation currency, it makes a great adventure snack while hiking, skiing, or biking since it's pretty sturdy when wrapped in foil and tastes extra good for third breakfast on the skintrack. We've been eating so much banana bread lately I've started to buy an extra bushel of bananas at the store each week just to wait for them to turn brown.


I love shredded coconut and am always looking for ways to sneak it into baked goods, but feel free to omit if you're not feeling it. Don't be shy with the brown sugar on top, though. That part is crucial.





Ingredients:

  • 2-3 medium ripe bananas

  • ⅓ C melted butter

  • 1 t baking soda

  • ¼ t salt

  • ½ C brown sugar, plus more to top

  • ¼ C white sugar

  • 1 egg

  • 1 t vanilla

  • 1 ½ C all-purpose flour (can sub half whole wheat)

  • 2 T unsweetened shredded coconut, plus more to top (optional)

  • ½ C chocolate chips

Directions:

  1. Preheat oven to 350°F and butter or oil a 8x4” loaf pan.

  2. Mash bananas and stir in melted butter.

  3. Add baking soda, salt, sugar, eggs, and vanilla and stir well.

  4. Add flour and coconut and stir until fully mixed. Add chocolate chips and mix again.

  5. Pour into loaf pan and sprinkle with extra coconut flakes and brown sugar.

  6. Bake for 50-55 minutes, or until a toothpick comes out clean.
